Friday was kind of gray, but it was still in the 50s…meaning too cold for sandals/flip flops, but warm enough for Toms. Getting to see purple on my feet = pure happiness.
Walking down to the restaurant to meet some friends for dinner- killing two birds with one stone (i.e. exercising and traveling), plus town is starting to get busy now that the season is beginning. One clue- the fountains are functioning!
Saturday started off with the MDI YWCA’s annual meeting which also involved brunch. The food was amazing- love when I can get some pineapple 🙂
After doing chores and studying, it was sunny and 60 degrees outside, so I decided to go for a hike! Although I have done Pemetic before, I tried something new and came up the Northwest Trail and down the South Ridge (which I usually do up and back). Northwest is a bit steeper/shorter up, but my back was a little sore this week so I decided to go longer/gradual on the way back down.
This involved having to walk back to the parking lot to my car along the Park Loop Road. As you can see, it was gorgeous out- and I saw some climbers on one of the Bubbles!
After hiking I did some grocery shopping. This bag of Annie’s White Cheddar popcorn was my ‘treat’ this week 🙂 It tastes just like the Smart Food version, too (and is just as hard to put down).
Food prep while watching The Golden Girls, makes the time fly by.
On Sunday I went to Milbridge and managed to see my brother for a bit before he went back to Massachusetts (he was just doing a quick visit over the weekend). Apparently he and my dad went smelting both Friday and Saturday, which I was a little envious of, but when I found out that the tide was 11:30 pm- 3:00 am, I was okay with missing out.
Did some chores, visited with my Grandmother for a couple hours, and came back for a walk on the beach and to make some dinner. I made some chicken with pesto spaghetti squash (super easy to make, the longest part is waiting for things to cook).
All I did: cut the spaghetti squash in half (the long way) and scoop out the seeds. Place on a baking sheet and put in the oven at 375 for about an hour. Season 3-4 chicken breasts and place in the oven as well (will take about the same amount of time to finish depending on thickness).
After the squash is done, remove from the oven to let it cool. Cut up 1-2 tomatoes (beefstock or red vine). Once squash has cooled, scoop into a big bowl. Mix in tomatoes and basil pesto to taste. I also added some sugar snap peas. Serve with chicken.
If I could do this differently, I probably would’ve cut up the chicken and mixed it in with everything else, but overall rave reviews 🙂 I also made a berry and apple crumble which we topped with Greek yogurt for dessert. So good!
And that’s all for the weekend. It’s rainy here today (and sadly that’s the forecast for the week), but I have some fun things scheduled- starting an Aqua Aerobics Class on Monday and Wednesday nights at the Y, digging into the “good stuff” in Personal Training Studies, and starting a May Challenge Group. In less fun news, I have my next prenatal appointment tomorrow and have to do the glucose screening test :/
